latest updates

i hv nt bn baking recently...as i feel my mum need to hv more of her OWN time.


as i come to realised that i didnt hv a very supportive hubby.

whenever i start doing my OWN thing, he wont bother me bt he wont bother to look after the kids either, so end up i will be running here n there and end up feeling damn frustrate & i will start to scold my ger for all sort of reasons. leaving me like a mad mum...i feel really sorry for her and myself.

nw i think i will nt hv much personal time unless i can rent a personal space/room, kitchen for bakery or sewing....

I love EXCEL!!!

nt been blogging.

Been kind of busy recently as was task for some other job scope

then realised that the timing in my pc has bn changed dramtically....nw the timing is 6.30am...bt this enable me to surf net till 8am (actually time is 11am) hahahaha! bt this also mean i cant surf net during lunch time...:(
anyhw, i am contended in some sense.:)

After being tasked for some NEW scope, i bn cracking my brain abt the formula i  need as  it needed to be simple yet professional.  then i realised that actually microsoft excel can dl templates frm net... ...so... ...easy and fast bt need some time to serach.:)

depressed

has been quite somtimes since i last blog.

I work then go home n cook then tend to my 2 young kids. Bn going to work with hubby nw so something which i really look forward everyday.:)

Work....nt bn really happy n bn quite busy.:) arrow here and there. so tired of all these. Wonder how long i have to endure/tolerate.

Something to share is that my cooking bn improved alot as well. 'Practice makes perfect'

Kitchen Set


last evening went out to popular & saw a kid kitchen set, n we decided to buy 1 for Jaelyn. this morning all 3 of us are so excited and start to assemble it.:)

For the past 5days i have bn cooking as well. bt is all very simple & easy dishes.

Work bn rather busy yet is fulfilling. Mgr as usual always fickle minded. on 26May he told me he want me do costing so is involve in AMT...bt ydae wen i finally complete, he say actually i need QTY n nt AMT... ...???...  anyway, i have all the QTY in my excel spreadsheet so i spend another 0.5 days to transfer AMT to QTY... ...hope Monday he wont say me bah....

Boss spoke to me on Monday evening, he told me abt the condition of the company, it seems that we arent doing well for the yr 2010. Hus suggest that i shld start looking ard & start sending resume out juz in case.

today, had a good day, maybe was looking forward to hus's promise.:)

menu for today:
minced meat with bean paste
Receipe:

Minced meat:300g or $3 worth
Bean paste: 1/2tbsp

seasoning:
Sugar-1/2tsp
water-2bsp

Corn starch: 2tsp corn flour + 2tbsp water

oil: 2tbsp
***********************************************************
1. heat wok & oil, add in garlic. fry till fragrant
2. add in minced meat and bean paste & add in water gradually.
3. Stir fry till meat are cooked. if is still salty, add in sugar.
4. If is still watery, add in corn starch, let it boil lightly & dish up.


beetroot & potato soup


honey peas with prawns
Receipe:
Honey peas: 1 packet abt 300g
Prawns: 6pcs-shellec, deveiled & diced

seasoning:
oyster sauce-2tbsp
water-3tbsp
OR
salt -1/4tsp

corn starch: 2tsp corn flour + 2tbsp water

oil: 2tbsp
***********************************************************
1. honey peas need to peel off the 'stem'.  after shelled the prawns, leave the head aside.
2. heat the oil and tir fry the prawn heads till fragrant and dish up(i throw it away).
3. add in the honey peas till there's slight change in colour.
4. add in the water and oyster sauce/salt.
5. after the water is lightly boiled, add in the prawns stir fry for awhile/till the prawn turn red.
6. add in the corn starch if is still watery.

i had a very moody monday. i totally hv no idea of what to cook as well. Hus cooked us a delicious breakfast. a good start for the day. then i start to surf net for some ideas for dinner bt still no idea. After awhile i decided to make a trip dw to sheng siong & bought some necessity then hv some idea for dinner.

Dessert: Durian Pudding with grapes




Bought the premix durian pudding powder frm NTUC. As instructed, add in 500ml water bt i only add in 350 - 400ml water. bring to boil then add in the powder & stir well till all are dissolved. then pour in this solution into the mould & leave it to cool/set.
Lastly, put into fridge to serve it cold.
i start to cut grapes/bananas into diced & decorate it b4 is the solution starts to set. 

Steamed Tofu &Fry Dou Miao

Ingredients:
Dou miao: 500g
Chicken Fillet: 3pcs, diced

seasoning:
Oyster Sauce: 2tbsp
water: 4tbsp

garlic: 2tbsp
Oil: 2tbsp

1. heat up wok, oil, stir fry garlic till fragrant, add in meats.
2. Once chicken is half cooked, add in the Dou Miao, add in seasoning & water.
2. cook till water is boiled. dish up & serve.

Steamed Tofu with fish paste & prawns

Ingredients:
Tofu: 1pc
Prawns: 5pcs, shelled, diced
Fish paste: 5tbsp

Spring onion: 1stalk, chopped finely

Seasoning:
2tbsp oyster sauce
water:4tbsp

** Corn starch: 1 or 2tsp corn flour + 2tbap water
******************************************************************
1. cut tofu into half & divide into 5pcs & placed onto steaming tray.
2. placed fish paste onto tofu & placed 1pc prawn on top. u cn sliced some muhroom & place ontop)Optional)
3. boil half pot water for steaming, when water is boiling placed in the tofu & steam for 10-13mins.
4. while tofu is steaming, we cn start prepared for tofu sauce.
5. heat up wok & stir fry garlic till fragrant then add in the oyster sauce & water. if this is still too watery for u, we cn thicken it with corn starch.
6. wen the water is lightly boiled, pour it over the tofu & sprinkle some spring onion.

Asparagus with eggs & meats & mushroom



This is my 1st time try this dish as i came across this receipe & once again i modify again, instead of prawns, i use meat while surfing net. Both hus & dad did hv good comments.

Ingredient:

Asaparagus: 10-15pcs, diced
mushroom:5pcs, soaked, sliced
lean meat: abt 30cubes
egg: 2pcs, beat

Seasoning:
2tbsp oyster sauce
2tbsp light soy sauce
4tbsp water

garlic: 2tbsp
oil:2tbsp

1. heat wok & oil. stir fry the garlic, mushroom.
2. add in the aparagus & water till soften then add in seasoning & serve.

17May- Steamed Fish(Red Snapper) & Fried long beans with eggs/mushroom



Our dinner: Nuggets, Steamed fish & Fried long beans with chicken. eggs & mushroom
Steamed Fish:
Ingredients:
Red Snapper: 1 pcs abt 500g
Mushroom: 3pcs, soaked, sliced.
Ginger: 3sliced
steamed fish soy sauce:3tbsp
Spring onion: diced or 4 small strips
Fried garlic oil: 1tbsp
half wok of water
***********************************************************************
1. Heat up wok with abt half wok water and steaming tray.
2. Lower the fire & placed the fish onto the steaming tray, decorate the fish with ginger/mushroom & spring onion
3. when the water are boiling, placed in the fish and steam for abt 10mins or till cooked.
4. after is cooked, b4 serving add in fried garlic oil & some spring onion(optional).

Fried long beans with eggs, chicken & shitake mushroom
ingredients:
Long beans: abt 6pcs, diced
Eggs: 2pcs, lightly beat
chicken fillet: 3pcs, diced
mushroom: 3pcs, soaked & sliced
seasoning:
light soy sauce:2tbsp
water: 3tbsp
constarch: corn flour: 2tsp + 2tbsp water
oil:2tbsp
**********************************************************************************
1. Is better to boil long beans with water(add in 1tsp oil & dash of salt) b4 frying to ensure is all cooked.
2. heat up wok with oil, add in garlic, chicken and mushroom. stir fry till fragrant
3. add in long beans & water. stir fry till is boil.
4. add in corn starch if is still too watery.
5. dish up & serve.

Cucumber with egg & chicken


Egg omelette with prawns

Cucumber with prawns and chicken
ingredient:
Cucumber, large 1pc, sliced, remove seeds
Prawns, 8pcs, deveins, shelled & diced
egg-1 pc, light beaten
chicken fillet-2.5pcs, diced
seasoning:
light soy sauce-1tbsp
Salt-2tsps
Cooking oil-2tbsp
**************************************************************************
1. heat up the oil then add in 2tbsp garlic, add in cucumber, stir fry till there's some water.
2. add in chicken, prawns, stir fry till half cook.
3. add in the lightly beat egg & seasoning. stir fry for another 2mins.
4. Dish up & serve.

Egg Omelette with prawns
Ingredients:
Prawns, 10pcs, shelled, deveins & diced
eggs, 3pcs
Seasonings:
seasme oil-2tbsp
light soy sauce-2tbsp
oil- 2tbsp

1. beat the eggs & seasoning well.
2. heat up the oil, add in the prawns, stir fry for 1 min
3. add in the eggs, leave in pan for 1min or till the base is cook, divide the prawns evenly
4. flip the omelette over lightly.
5. when all are ready, dish up & serve with some chopped spring onion.

Lers outing-ZOO

this trip was planned a few weeks ago & Singapore bn raining quite frequent so we keep postpone & finally, a sunny saturday morning, hus decided to bring jaelyn to zoo. i was very excited. hahaha! we all woke up damn early to get prepared.

here some pix to share:









steamed silky eggs



this dish is really simple yet very difficult to get it the right texture. i tried steam it a few times, i still cant get the right silky texture.
ingredient:
300ml water
3eggs, large
seasonings:
seasme oil-2tbsp
light soysauce/maggi soy sauce-2tbsp
dash pepper & chicken stock
1tbsp garlic oil
spring onion-1tbsp
**********************************************************************************
1. combine water, eggs & seasoning and mix well. strain into a steaming tray
2. steam at low heat for 10-12mins or until set. remove.
3. sprinkle chopped spring onion, fried garlic oil on egg & serve.
***do not steam eggs eith high heat, otherwise the texture will be coarse & nt smooth. also lightly beat the eggs to avoid too much air frm getting in.

sweet & Sour Chicken



hus loves this dish so much. he is kind of fussy eater so if this suit him, i am sure this receipe shld be love by others.
ingredient:
500g chicken fillet(abt 10pcs), cut cubes
marinates:
shao xing wine-2tbsp
light soy sauce- 3tbsp
seasme oil- 2tbsp
corn flour- 2-3tsp
egg- 1pc
deep frying:
self raising flour -4tbsp
corn flour -4tbsp
custard powder-3tbsp
capsicum- 1pcs, cubes
red chillies, large- 1pcs, sliced
pineapple-1 slice
sauces:
plum sauce- 3tbsp
tomato-4-5tbsp
sugar-3tsp
water- 125ml
************************************************************************************
1. marinate the chicken for at least 30mins to 1hr. b4 deep frying, coat the chicken with the flour(mix the 3 flour well).
2. deep fried the chicken till golden colour. set aside. Make sure the oil is HOT b4 put in the chickens cubes. also do not cover up when deep frying.
3. deep fried the pineapples, for a 1-2 mins. then drain off the oil. add in all other ingredients, stir fry for awhile then add the the sauce, after it boil, add in the chickens stir fry for awhile and dish up. if sauce still too watery, add in the corn starch to thickening.
***to deep fried the pineapple is to enchance the smell.

mixed veggies with prawn in claypot




This dish was frm a receipe book bt we modify it & add in the brocoli & egg tofu bt my egg tofu was badly deep fried. :) nevertheless, we enjoy this dish.

ingredients:
broccloli - 1 bunch, cut into smaller pcs.

prawns- 6pcs, shelled, develied

carrot - 1 pc, sliced
honey peas- 1 packet

egg tofu- 1 tube

roasted pork- 100g
mushroon- 6pcs, cut out the stalks.
garlic- 10-12g
seasoning:
oyster sauce- 1/2tbsp
salt- 1/4tsp
light soy sauce- 1tsp
pepper- 1/4tsp
corn starch
corn flour- 1tsp, mixed with 2tbsp water
**********************************************************************************
1. deep fry tofu till golden brown. dish and drain.
2. heat up oil in claypot or if ur pot is small, can fry ur ingredient in the frying pan then transfer back to the claypot.
3. heat up the oil, add in the garlic and giner till fragrant. add in prawns, roasted pork, honey peas, carrots and stir well. ass in seasoning, bean curd, cook for 2 mins & transfer back to claypot
4. if u do not too watery version, thicken with corn starch and remove from heat.
***if ordinary claypot is used, do not add in cold water to prevent it frm cracking.***

Dessert:- Red bean with glutinous rice balls



Bn longing for this dessert for sometimes. Recently juz come across this dessert receipe frm internet.
is pretty easy & fast. it takes abt 2hrs to get ready.
ingredient: serve 4ppl
black glutinous rice-3/4cups
red bean-1 cup
pandan leave- 3pcs & tie a knot
rock sugar- 3/4cup
glutinous rice flour-3/4cup
water- 1/2cup
cornflour - 1tsp + 4tbsp water (optional)
orange peels (optional)

1. wash the reb beans & black glutinous rice
2. boil abt 500ml water over the stove (is best we use claypot to boil or use slow cooker). add in the red beans & black glutinous rice & pandan leaves. constantly stir this pot of beans/rice to prevent it frm burned or sticked.
3. while waiting for the beans & rice to cooked, soften. we can mix the rice flour with water to make dough & then make the rice ball.
4. use another small pot to boiled the rice balls till it float is cooked. dish up and leave aside.
5. abt 1.5 - 2hrs the red beans & black gluntious rice shld hv soften(to ensure it is cooked, we can scoop up and use spoon to check if is soft)
6. add in the rock sugars, stir till the sugars are dissolve. if still nt sweet add in to ur preference sweetness. if is still watery, add in the corn starch and stir well. let it boiled for awhile & serve it in a small cup and add in the rice ball.

Both hus & I saw this dough while shopping in NTUC & tot y nt hv our own pizza w/o much cost.
so bought the dough at $5 for 6pcs...is kind of ex so we bought more bread back hm to hv bread verson pizza, is nice & tasty.


ingredient:

capiscum, large - 1pc, diced

tomato, large- 1pc, diced

prawns-6-8pcs,shelled, diced

mozella cheese-1 packet

button mushroom, 1 small can

picnic ham, 5-7slices, cut in strips

pineapple, optional

chicked, optional

tomato sauce, 1 bottle

chilli sauce, 1 bottle

************************************************************************************
1. pre-heat the oven at 180 deg.

2. spread ur desired amt of tomato sauce on the dough or bread.

3. topped up the dough, with all the ingredient as desired, leave some small gap at the end.(we used left over chicken meat/prawns as well)

4. lastly top up with mozella cheese.(myself, i dun like it to be too cheesy, so i only top up at the centre, it look presentable also wen served. hus loves to hv some spicy feel so he will spread on some chilli & top with losts of cheese. for children's version, no chilli,no pineapples only. i can say she isnt a western food eater...hehehe!)

5. baked for 10mins, u gt to watch out for it. Since all r cooked/ready to eat. Once the cheese start to melt, is ready to serve. we use chopper(small type) to take out frm oven.

Mee Rebus



Was shopping for groccery with both hus & YY on sat & come across this me rebus pre-made sauce. then i hv this sudden craving for mee rebus. since my family had move in with us if i need to buy 4packets of mee rebus will cost $12 & it wont ease our craving if we wan more so home cook will be better as it might save us more, modify to our preference & we cn eat more...
ingredient:
500g mee
500g mee hoon
premade sauce - 2packets (serve 4)
water - 150ml
lime - 6-8pcs
large green chilli-4pcs, sliced
beans sprout-250g, plucked off the end
eggs-large 4pcs, sliced
*******************************************************************************
1. boiled the sauces together then gradually add in the water till boil & thicken & side aside.
2. boiled another small pot of water for the mee, mee hoon.
3. when the mee r ready to consume, add in the sauce & serve with egg, chilli, lime.
is yummy!!!

had bn having tis cooking interest eversince i gt my own hse bt bn havign some difficulities. Recently i had show some improvement in cooking & nw i cn see tat hus starts dnt complain so much abt the food i cook.

maybe bcos he also bn cooking with me for a week and i pick my self confident frm there.:)

our precious 2 kids progress

Our prince, Javier is 3mths old sn. he respond well to our calling. and sometime when he is happy, he will smile at us. if he is happier, he will try totok to us. :). He loves us to tickle. He is different frm Jie jie. Jie jie dun hv so much expression at this age.
we love his toothless smile. and i always take snap many picture of him, pls see below.







my princess, she attended sch since Mar'10. We are happy abt her progress and we arent prepared to let her go for full day child care. if mum really cant cope well with her & didi then we may think of alternative ways. YY is nw very sociable towards children, we cn see that she is happier as well. she will sing,play by herself or dance by herself. nw she will imitate us or follow the way the actress/actor sing/dance on OKTO channel. bt she is becoming more rude, stubborn nw, i need to show off my anger or cane b4 she obey my instruction. once she refuse to hv her lunch, i gt to cane and cane then she eats. another time, i gt to cane her for jumping on sofa/bed bt she still jump after a day... ...!!!
haizzz...i am going back to wrk real sn. i hope after i wrk, i wont need to cane her so much.

Jaelyn dw wif runny nose & slight cough.

this is her 2nd time falling sick ever since she came back stay with us. she had start going to sch as well. we r happy with her progress. nw she is more socialable. She speak more and able to express more bt she cn b very rude as well. sometimes i really give up. esp when hus is ard.

our bbno.2, he is nw 2mths old. able to recognise voices. doing well bt his poo poo always very watery. he feed on Similac. he tend to smile more. is nice to c his toothless smile. he is afraid of ticklish. i always say he express more.

my bb no.2: Javier Ler

My 2nd bb was born on 9feb2010. in KKH.

i prayed hard that he to be born b4 CNY. I didnt want him to be born i the yr of tiger. Lucky enuff tat i had dilated a week b4 14feb.

today:14feb.
He was admitted to hospital on 13feb bcos of high jaudice. Again i got to go thru this again. I cried again. Hubby scolded me. I jus cant help it even though i knw phototheraphy is the best solution to reduce dw his jaundice level.

Many ppls say children of mummy havingO+ blood group tend to hv such problem. Even doc also agree. I hope he can come back hm soon.

24Dec07 - BB had colic again.Finally bought her a pigeon wide neck milk bottle which say it has block wind function.

02Feb08 - BB had her 1st immune vaccine & she is handling well, no much crying... ...no fever, no cranky. given her some 'pao shen'water b4 going for jab. &
1st CNY with family, get to go out only in the afternoon as need to let her hv enuff nap Managed to get to a few relative place. Uncle Shane birthday on 1st day of CNY. Had Colic

Mar08- BB 2nd vaccine jab - the same, no much crying juz 1 scream when needle poke in...given her some 'pao shen'water b4 going for jab.BB 3rd vaccine jab - Same as all above.:) bt of course gt abit of discomfort.

May08-BB 4th & last immue jab as we opt for 6in1 jab...to lessen the torture...haha!!!Ah ma let me to hv my 1st taste of chicken...nt too gd...haha!

Jun08 - Had her 1st rice cereal. Finally bought a walker. start to mix mashed pumpkin with rice cereal. Bought Heinz veggies & fruit juice for trying, she didnt like it & i feel is better to give naural juice.

Start to blabbing 'ma ma' & 'pa pa'. Start to feed BB jae some brown rice cereals.
